3/4 Cup Edible Rice Bran

1 1/2 cups Rice Flour (Roasted Rice Flour or Idiyappam Flour)

1 Tsp Salt

2 1/4 Cups Water (Total Flour to Water Ratio is 1:1)

Mix the Edible Rice Bran and Rice Flour together in a bowl (Sift if lumps are present)

Boil the water in a large pan (The pan should be large enough for all ingredients above). Add salt into water and stir using a spoon to dissolve the salt

Once water has boiled, turn off the stove and immediately add the flour mixture into the hot water while continuously stirring with a wooden spatula. (Two persons may be needed at this stage, one to hold the pan, while the other stirs to make the dough)

A soft dough will be formed, cover with a wet cloth

Fill the dough into a wooden press with small fine holes and squeeze onto a steaming tray to shape string hoppers

Steam the tray for about 6 minutes to cook the dough. It will look more transparent when cooked.

Remove and place string hoppers in a plate
Preparation Time: 15 minutes
Cooking Time: 45 minutes
Makes 30 String Hoppers
Serve these soft string hoppers with your favorite side dishes like Dhal Curry or Chicken Curry and enjoy.

For firmer string hoppers, increase the Rice Flour by 2 Tablespoons.
