Rice Bran Muffins

Ingredients

Method

  • 5/8 Cup                Edible Rice Bran

  • 1 1/8 cup all-purpose flour *

  • 1/3 cup sugar

  • 2 Tsp Baking Powder

  • 1/4 Tsp Salt

  • 1 Large Egg - Beaten

  • 3/4 cup Milk

  • 1/4 cup cooking oil

  1. Turn on Oven to 400°F (205°C)                                                             

  2. Grease twelve 2 ½ - inch muffin cups or line with paper bake cups or silicone bake cups, set aside.  Combine rice bran, all-purpose flour, sugar, baking powder, and salt in a large mixing bowl. Make a well in the center of the dry mixture and set aside.

  3. In a medium mixing bowl combine egg, milk and oil. Add wet mixture all at once to dry mixture. Stir just until moistened and batter will be lumpy.                                                                                     

  4. Spoon batter into prepared muffin cups, filling each 2/3 full.               

  5. Bake in a 400°F oven for 20 minutes or till brown. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups and serve warm.

Preparation Time: 10 minutes

Baking Time: 20 minutes

Cooling Time: 5 minutes 

Makes 10 to 12 muffins
